I basically checked Each meal kit in the market for the past few years. And while there’s no denying the sheer convenience they provide, I’ve also learned a few tips and tricks to make the experience smoother—like the gadgets and gizmos I reach for when a new box arrives at my door, full of cooking ingredients. From my favorite pan to the best oil, consider these essentials if you’re cooking more at home. Of course, you probably already have a cutting board and a pan. Is there anything else I should have on hand?

I go through a lot of paper towels when I’m making meal kits. I recommend keeping a Rachael Ray-inspired “trash bowl” on the counter for things like random bits of plastic and the aforementioned paper towels. (And a separate one for veggie scraps, If you compost.) Another thing to note is that you will likely use a lot of food when cooking a meal kit. For the best experience, start with your dishes done and your dishwasher empty. And finally, I like to keep a pair of scissors around for cutting open sauce packets or chopping green onions. I don’t think you really need special kitchen shears, but if you have some, they will come in handy. Otherwise grab whatever (clean!) pair you have on hand.
