But they were still flaky, buttery, classic-flavored viennoiserie with a brown exterior and airy structure inside, still hot from the oven and just enough to shrivel under the subtlest touch.

If they were delivered to my plate at a local restaurant, I’d treat these croissants as fresh-baked-from-scratch. And yet, just 20 minutes ago, these pastries were frozen solid. Two hours ago, they were in a delivery truck bound for my house.
Wildgrain has a concept both new and old: delivering fresh bread. A Wildgrain subscription comes as a monthly box, filled with four, six, or 12 items that can range from a whole loaf of sourdough bread or freshly made pasta to a pack of six donuts or four large croissants. Frozen baked goods can be kept in your freezer whenever you need them—when the family stops by for a Sunday evening visit, say. Bake times range from five minutes (donuts) to 20 minutes (croissants, pumpkin biscuits.) Baked goods don’t have to be thawed before baking: you pop them frozen.
The reason this process works is because the bread is mostly already baked. Wildgrain contracts with small bakeries, although their identities were not disclosed, according to company representatives.
